Home production of coconut oil - Jerard
- Extract milk from coconut kernel by grating and squeezing. If you add water keep a watch on how much you are adding. The water should be warm (mix of 3 parts cold water and 2 parts boiling water). If you get milk without adding water it would be easier for calculations.
- For 500ml of milk, add 500 ml of water mix and make it to 1 litre. If you have already added water during extraction subtract the quantity.
- Now pour the milk mix in a wide mouthed vessel and cover it with lid. Place the vessel in a dark corner of the house over a carpet ( do not place on floor) and cover it with thick blankets.( to keep warm).
- Allow for 16 to 18 hours fermentation.
- Slowly open the lid. Remove the top layer of cream and keep separately. The second layer is pure oil. The third and fourth layer can be discarded. The first layer cream can be boiled to get உருக்கு எண்ணெய் which can be used for all cosmetics purpose and deep frying fish etc. It will be more aromatic. The second layer oil is less aromatic and can be used for all uses. The oil should be sun-dried for about a week (if it is to be stored for long). For that keep the oil in a wide mouthed vessel, cover it with muslin cloth and keep under open sun daily. Do not forget to take back inside the house by evening.
- So your home made healthy oil is ready.
- From 5 coconuts of medium size, one can get about 500 to 600 ml of pure oil.
